Summer Campout: Relaxing by the River and Delicious Eats

Honey Pie and I are back with another camping adventure, and this time, we found the perfect spot – right next to a babbling river! The shallow water teemed with life, from curious crayfish to darting tadpoles and shimmering fish. Honey Pie, in his element, spent hours chasing sticks and observing the river's lively residents.

With the summer sun warming our backs, I decided to treat myself to a breakfast fit for a king (or perhaps a very good boy and his human companion). Fresh oatmeal formed the base, but the real magic came from the toppings – roasted chestnuts for a nutty crunch, sweet bursts of coconut flakes, vibrant goji berries, and juicy strawberries. A drizzle of maple syrup tied everything together in a delicious and satisfying way.

As the day wore on, the aroma of grilled goodness filled the air. Dinner featured a juicy flank steak, dry-rubbed with a mouthwatering carne asada mix. Garlic, onion, chili powder, cumin, oregano, and black pepper came together to create a symphony of flavors. These delicious steaks were transformed into tacos, piled high with fresh chopped onion, fragrant cilantro, and a dollop of tangy salsa verde from La Abuela Mexican Street Food (a must-try at St. Jacob's Market!).

To complete this perfect summer feast, we sipped on ice-cold horchata – a refreshing and creamy drink made with rice milk, sugar, cinnamon, and vanilla. The perfect way to cool down on a warm summer evening.

With a busy summer in full swing, this camping trip was a much-needed escape. Relaxing by the river, enjoying delicious food, and spending quality time with Honey Pie – it's the simple things in life that truly rejuvenate the soul. Stay tuned for more adventures to come!
